Tater Tots for breakfast? Yes!
Admittedly, I’ve almost always had tater tots as a standalone side dish and served with either a hamburger or a hot dog. When I received a coupon for a free bag of Ore-Ida® Tater Tots in the Influenster Jingle Vox Box, I thought that might be exactly what I’d do. Wait for one of our warmer winter days, fire up the grill, and warm up some tots as a side.
Then I learned about Ore-Ida®’s new idea: Totchos. Think of the tots in place of chips when you’re having nachos and all the possible recipe combinations. The recipe that caught my eye was a breakfast one with bacon and sausage. Truthfully, bacon and sausage fall into a category with ham for me – the right time and the right amount. I also wanted to try to make a recipe with items already in my pantry & fridge.
My twist on the recipe is simple and barely even needs written instructions. Basically just combine your cooked Tater Tots with scrambled eggs, crumbled bacon, and some shredded cheddar. Then serve. That simple.
It makes an easy breakfast or, in our case, dinner. I whipped up a few drop biscuits and peeled fresh mandarins for sides. After dinner I had nothing but clean plates and a clean serving dish. A sign of a good dinner.

Ingredients
- 32oz Ore-Ida® Tater Tots
- 8 Eggs
- 6 slices of Bacon
- ⅓ cup Shredded Cheddar Cheese (optional)
Instructions
- Preheat oven to 425º and bake the Ore-Ida® Tater Tots per instructions on package.
- Lay out bacon on a cooking dish and microwave per package instructions. Typically about 1 minute per slice.
- Crack eggs into small bowl and beat gently until smooth. Pour into hot pan and scramble.
- Remove cooked Tater Tots from oven and pour into serving dish.
- Add scrambled eggs over Tots.
- Crumble the bacon strips into small pieces by hand and toss over the eggs and Tots.
- Top with cheese if desired.
- Serve and enjoy!
