Resolution: Healthy Eating

January 7, 2016 Sarah Coggins

As a stay at home mom, I’m constantly busy doing something to help take care of everyone else. Which means, while I typically get our dinners planned and on the table, sometimes I get distracted during the day and forget about lunch for myself. Never a good thing.

In the past 8 years, along with becoming a mom to 2, I’ve also lost 50 pounds. Yes, you read that correctly and that was aside from the pregnancy weight. I’m literally 50 pounds less today than my weight pre-kids in January 2008 when I had a wake up call and knew I had to make a change. I wanted to be healthier for myself, for my hopeful future pregnancy, and for my future children. I didn’t want my weight to cause health issues or slow me down.

Healthy Eating Difference: Then & Now
The proof! At my heaviest in January 2008 and a selfie today at my new healthy weight!

There were no secrets, shortcuts, or fad diets in those 8 years – especially not when I was pregnant. It was simply diet and exercise. I learned along the way that those 2 things were the key for me to loose the weight and now to maintain my current (much healthier!) weight.

On cold winter days like today, I’m grateful that fixing myself a healthy lunch can be as easy as opening up a can of Progresso Light soup and warming it up. Chicken Noodle tends to be one of my favorites, but is far from the only option Progresso offers in their Light soups. I found 10 different flavors while grocery shopping at Publix earlier in the week – there is something for everyone.
