Weeknight Dinner: Chicken & Herb Rice

I’m a big believer in easy weeknight dinner options. We rotate through a lot of the same meals (breakfast, tacos, pizza, fajitas, spaghetti) which we enjoy, but every once and a while, it’s nice to try something new.

Recently, Influenster sent us a package of Uncle Ben’s Flavor Infusions Chicken & Herb Rice to try. I confess, it had been quite a while since we had tried Uncle Ben’s and I was pleasantly surprised by it.

I followed the recipe on the back of the package for cooking the chicken and the rice. I left out the frozen vegetables though. Instead, I steamed fresh zucchini and squash from our recent Produce Box while the rice cooked.

All in all it was a quick, easy, and very tasty meal. Everyone (even our picky toddler) cleaned their plates of the chicken & rice. A huge success.
